A friend just asked me to do a bday cake for her two-year old son. She's having a party with 32+ people. The party is Saturday, July 29. I am leaving town the day before. Can I make the cake on Wednesday, frost and decorate it on Thursday, then stick it in the refrigerator overnight and deliver it to her on Friday? Then she'd have it in the refrigerator for another day before the party. So I guess once finished, the cake is stored for two days before the party. Is that too early for the cake to be finished?
that's the other question . . . I think an 11x15 would be big enough for that size, right? I have not been brave enough to try stacked cakes yet so I probably wouldn't consider that as an option yet as I don't have a lot of time to experiment in the next few weeks. The only guidance I've been given so far is that the theme is "construction" and "trucks" and I know there will be a lot of ideas in the photo gallery. I just really don't know if I'd be jeopardizing the freshness of the cake if I finish it so soon. Maybe I can frost and decorate it Friday morning so it's only stored in the refrigerator for a day before the party, which is standard, right?
oh, and I forgot to mention flavor. Probably just a white cake frosted with buttercream. Do you do smash cakes for two-year olds or is that just for the first birthday?

yes...
now as to how tight to wrap it...depends upon what else is in frig.
for example..I almost always have onions in mine...i've never heard of anyone wanting onion flavored BC ![]()
so...airtight is really necessary, in the box will be ok..just tape the box shut and banish the onions! we're storing not emblaming...air tight container not necessary.
