I was wondering if anyone has baked their cakes using a convection oven. I've been a little scared to try this because I don't want my cakes to come out overdone or have some parts cooked more then others. If you have tried this, do you find it works better then just using the conventional oven? Also, what tempurature and cooking time changes do you make when doing a cake on convection?

I always bake my cakes at convection when I need to cook more than one. Instead of putting your oven at 350 degrees, you need to lower your oven, I bake at 300 degrees with convection. I can easily bake 9 round cakes at the same time. Usually it takes the same time to cook than regular cakes when you do it that way. They even bake more even and less leveling to do! hth

I'm assuming that you are baking more than 1 cake at once, like 2 round cakes, correct? How about if you are just baking one cake, like a 9x13?

I don't know if this will help, but I have a commercial convection oven. I have baked anywhere from 1 to 17 cakes in it at a time. I set the fan on low and the temperature at 300 and it has worked just great!

I bake with convection all the time. I bake at 325 degrees on the 3rd rack and baking time is similar to standard bake. I don't bake with multi racks as my oven doesn't seem to bake very well that way (maybe cuz it's an older oven?)

I bought a new wall oven about a year and a half ago. I decided to stick with the conventional oven since I have my cakes down to a science in baking conventionally all those previous years.
