What size ...shape and dimensions...cake would be best to start practicing covering with fondant? I've only covered one styled cake with it and I was terrified doing it. I told myself I would figure out a way to do it in b/c. I really want to do it but would like input as to what size is easiest so I can go from there.

I would start with just an 8 or 9 inch round. It's not so intimidating. You can do this.

would 1 layer be easier than 2 or 2 easier than 1?

I don't think it'll make much difference skill-wise, but you'll use less fondant with 1 layer!
