Does Cream Cheese Icing need to be refrigerated? I am making a full sheet cake and I do not think it will fit in the refrigerator. Here is the recipe. The cake will be picked up on Friday morning for a Saturday wedding.

1/2 softened cup butter
1 8 oz. pkg. softened creme cheese
1 tsp. salt
1 tsp. vanilla
Cream butter and creme cheese. Add powdered sugar.
Beat until fluffy. Add salt and vanilla into the icing.

Thanks!!

You really need to keep cream cheese icing refrigerated.

Yeah, I don't think I'd take the risk. I've always refridgerated my cream cheese icing.

Not all cream cheese frosting requires refrigeration; it depends on the proportion of fat and sugar to the perishable ingredient.

Here's a cream cheese frosting that doesn't require refrigeration:

(From Sarah Phillips of baking911.com - testing of frosting and filling recipes to determine if they need refrigeration.)

Here's a handy chart on how to safely store frostings and fillings:

You're very welcome, mdutcher. icon_smile.gif

Was pleased when I came across this info as the question comes up frequently. And no one wants to make their customers or loved ones sick by chancing a perishable filling or frosting...

Guess this falls under "Better Living through Chemistry".

You can also flavor your favorite frosting (shelf stable) with cream cheese extract for another option.

For a large selection of extracts at very reasonable prices:

Thanks for the articles. I hate to be the judge of what does and doesn't get refrigerated! A flavoring might do the trick!
