Cake/filling Combo Ideas???

I made a white chocolate/raspberry cake today, and was planning to fill it with a raspberry mousse, but the cake was much much MUCH sweeter than I thought it would be! Do you think I should still try a raspberry mousse filling, or is there another filling I could use that would cut a little of the sweetness of the cake? Thanks so much, in advance! icon_smile.gif

How about doing just a raspberry preserve instead? That is a little tangier.

Also, you can do a cream cheese filling or even a lemon curd. I've heard of lemon curd with raspberry cake, although I've never tried it, I think it would be a great combination.

Lemon Curd mixed with whipped cream would be a nice subtle flavor to cut the sweetness. I also like whipped cream with fresh raspberries since they are tart it goes great as well.

i have done the cream cheese filling and mixed just the seedless raspberry jam in it and it went over so well that the extra that i had went to the rehersal dinner and they dipped berrys/ fruit and plain cookies in it. I can give you the name of jam it was one of the better quality jams.

I also have a question about fillings i was thinking of making a nice summer filling. i want to do the cream cheese filling but put crushed pineapple and manderine oranges broken up or possibly place in the middle individually. I am not sure if this is going to be to much moisture with the oranges. any suggestions?

The pinapple sounds really good. I just did a coconut cake with pineapple filling. Here's the recipe I used to make the filling.

3 Tablespoon all purpose flour
½ cup sugar
2 Tablespoon butter or margarine
20 oz crushed pineapple (I drained, but I guess you don't have to)

Mix the flour and sugar in a saucepan, add the butter and pinapple. Medium heat until it thickens.

I wouldn't use just the pinapple because it might seep into the cake and you'll lose some of the flavor.

My favs are:
Lemon buttercream filling with white cake
White almond cake with raspberry sleeve filling (really tart)
Lemon filling with buttercream and flake coconut
As stated above coconut and pineapple is great too
I think all of the above are great for summer because they are all light flavors.
