I would like to do a cake similar to the square one here. I plan on using a 1/4 sheet. I've never worried about having perfectly straight edges around the top of the cake because I've always piped a border around the top and this covers any flaws. How do I get it perfectly straight. Is it to difficult for a beginner? I could always just add a border- maybe a bead border would look nice?

I looked at the upside down icing article and it seems like an awful lot of work!

Thanks for your input.

Have you read the CC article on how to frost a square cake? I found that to be very helpful. Also I use a bench scraper, some call it a dough cutter. Good luck and if you discover some amazing way to do it. Please let me know.

the upsidedown method erally isnt a lot of work its sooo easy and it's a great was to get perfect edges...when the icing is frozen it's easier to cut and make perfectly straight..it takes a lot of practice if you're just icing it

It's still takes me a half hour to get my cake as smooth as I like (maybe I need to try the bench scraper). I smooth the top from the outside edge in so I don't accidentaly mess up the edge. Im no pro though. I grew up in ohio, Vandalia, I miss it.

Hey MissyJo. I'm in Chillicothe. I like visiting Florida, but I think I'd miss the seasons.
