I AM MAKING MY FIRST 3 TIER CAKE FOR AN ANNIVERSARY. THEY WANT B/C ICING, HOW DO I MAKE IT LOOK REALLY SMOOTH LIKE FONDANT?

There are several methods that people use for smoothing-using a hot knife/spatula, the melvira method (you can find that one in the articles section)and my fav and the one that works for me-waiting till the bc crusts then using a viva paper to very gently smooth the icing and then use printer paper to finish smoothing(amazing trick by sugarshack!!). It takes practice to see which on works best for you and the icing that you use.

Also, are you up on proper construction techniques for stacking? Very important to the survival of your creation!
