HELP!
how do you know how thick to roll your dough? I have been attempting to make cookies every night this week and some come out good and others are too thin. I need to get 150 cookies baked by tomorrow night so I can decorate in time for a baby shower on Saturday. Please help!
The craft store has square dowel rods (usually in the same aisle as the car kits and other wooden crafts) in different thicknesses. Pick one, cut it in half, wrap in plastic wrap, place on either side of your cookie dough, and roll your pin on that and voila!
I make mine 3/8" thick and 1/4" thick is another popular thickness. It depends on what you are doing (cookie bouquets need to have thicker cookies to stay on the stick) and just personal preference.

I generally eyeball my thickness, but I strive for 1/4". Sometimes I will go "whole hog" and make them thicker, but my problem is that I tend to roll them a bit too thin. Yikes!
I say that as long as they are baking evenly and completely (without burning or getting TOO crisp), then the thickness is good.
