Hello, I am making my neighbor 5 cookies to give to room moms and teachers and I need a good recipe to use that will hold up a cookie on a stick but still be soft enough that it is not a crunchy cookie. I also have made royal icing before but it is neverthat shiny .... what do you use to get it that smooth/shiny and perfect? Sorry about my ignorance in the whole cookie making thing icon_smile.gif

I hate crunchy cookies and we use the NFSC recipe. Fabulous taste and the cookies are firm enough for sticks but still a soft texture.

I prefer Penny's cookie recipe. I think people add corn syrup to make the RI shiny.

thanks I saved the recipe from CC last week I guess i will try that tomorrow and see how they turn out ... any advice on a RI recipe? I may just end up covering in fondant, I am not sure yet.

I made these cookies on a stick last night. They were very good. But, some of them cracked or broke off of the stick from being cut too thin. The thicker ones were fine. Also I used the glaze from Pennie's cookies and thought it was nice. Tonight I am going to do some lettering and all. Hope it works as I am making 17 different gifts with 5 cookies each for my senior students who are graduating.

did you use penny's recipe?

No, I used NFSC recipe found on this site. I have a different recipe at home that has sour cream in the dough. I love it, but it is time consuming and sometimes hard to work with. But, the cookies are good. This recipe is also good.

I use the recipe for rolled sugar cookies on www.cakewalkchicago.com I use confectioners sugar in this recipe. Makes them taste more like butter cookies.
