I made my first batch of MMF last week for a cake order and I wasn't impressed with the taste of MMF. I thought it tasted like the Wilton. Could it be a texture issue or am I the only one who things all fondant is going to taste nasty no matter what?

I made my first batch of mmf this week and everyone loved it. What recipe are you using? I'm just using marshmallow fluff and powdered sugar and then kneading it with some crisco. A friend of mine uses the marshmallows and does the whole cooking thing and I don't think hers tastes near as good as the fluff recipe.

I tried Wilton fondant and that stuff is nasty! I started using MMF, and my family eats it out of the bag, but then we roast marshmallows for a snack alot. Try using different flavorings, instead of using vanilla, I use different extracts such as pineapple, strawberry, raspberry, etc. Just experiment a little!

That is all i used...well mini marshmallows and powdered sugar and crisco..I didn't add flavoring..guess I should. I like the cost friendly way of making it! I just was disappointed with how it tasted since everyone says its so much better.

The recipe I use is:

1- 16 oz bag of Large Marshmallows
2 tablespoons water
1-1/2 tsp. flavoring
2 lbs. of powdered sugar.

First I coat a glass bowl with Crisco that I melt the marshmallows, water, and flavoring in. I microwave in 20 sec. intervals until the mixture is soupy. Usually 2-3 times. Then I Crisco my KA bowl and the paddle and mix the melted MMs, and 1 lb. of the sugar. It will still be sort of soupy. Then I switch to the dough hook to mix it the rest of the way.T to keep it I wrap it in saran wrap and keep in a ziploc bag. Hope this helps!

Definitely add some flavoring, at least some vanilla extract, to the mmf. It is not appealing without a little extra oomph.

Ask your taste testers what they think because you could very well hate all fondant. I know I do, I can't stand the stuff...marshmallow or otherwise. But people I do cakes for love it, I'm always being asked how to make it.

I find that the pieces I've painted with luster dust and lemon extract taste significantly better than the plain pieces. I'm going to try adding a little lemon extract (in addition to the vanilla) to my next batch. It also occurs to me that since a pinch of salt improves the taste of crusting buttercream (cutting the sweetness of the powdered sugar and the mouthfeel of the crisco) that it might help my mmf as well.

But I also think that I just don't have that much of a sweet tooth (for all that I love to bake) and so the mmf tastes too much like marshmallows and powdered sugar for me.

i add a bit of salt water to my buttercream so i decided to add butter flavoring to the mmf.. its pretty good... blends much better with the bc underneath....

is it the taste or texture you don't like? If you don't like the texture, then you probably won't like any fondant, mainly b/c their textures are so close. If it is the actual flavor you don't like then you can try adding different flavorings, or try different brands. Each brands seems to have it's own unique taste.

I don't really care for marshmallows plain to eat..I like them in smores, and other things but just to plain eat I don't like. To be honest I think its a texture thing...like I feel like I am eating playdough...LOL does that make sense?

This is the same recipe I use- although depending on the day I don't use all 2lbs of sugar. If you let the fondant sit on the cake for a day or 2 it softens right up and tastes like soft marshmallows again. Thats what I do and my customers love it to death.

Wilton definately tastes alot worse than MMF...I dont think there is any comparison.

DH says that MMF tastes like Circus Peanuts. I have to hide the MMF from him because he eats it all!

I made my first batch of mmf recently. I thought it tasted okay. I like the circus peanuts comparison, it is kinda like that. To me it tastes more like candy and not something that would go well with cake. I've tasted the wilton stuff and it's nasty, to me it tastes like gym socks. My dh wasn't fond of the mmf, but agreed it was worlds better than wilton. I used it on a tooth cake for dh's coworker and turns out the guy absolutely loved the mmf and was asking all about it. So I guess everyone has different tastes. I haven't let my kids try it yet LOL because I know they'll eat it all up.

notes to self --

duh...remember to grease the bowl!!! (same goes for when making rice crispies)

don't improvise too much ...follow recipe and put in water

SIFT !!!!!!!! -- you live in high(!) humidty!!

and

oh, lemon flavoring is soooooooo yummy!!
