Can someone explain to me why the small batch of MMF has 1 TBSP of water to 1 cup of water and the large batch of MMF only has 2 tbsp of water to a whole bag of marshmellows? I typically only make the small batch because the first time I made the large batch it was WAY too dry.
I am a little confuse w/ your question...what did you mean by
"1 tbsp to 1 cup of water " ? One cup of water is definitely an error, unless you are making 50 batches of MMF.
I always make : 1 bag Mini Marshmallow
1 Bag Powder sugar
4 T. water
1 tsp Crisco
and I have not had an issue or problem with mine. One batch is really not a lot.. you have enough to cover the cake and make decorations.
It's hard to cut the recipe in half, unless it is very precise. ![]()

I kind of wondered the same thing. The only thing is that the recipe for the large batch that I have calls for flavorings but the small batch doesn't. but there still is a big difference. I have only made the large batch once, and I think it was a little too dry. The small batch I made was much softer, but I dont really know for sure which is the right consistency.
I wondered this same thing when the recipes were sent to me. I just make up the difference with Powdered sugar, in the large batch I don't use as much as it calls for (unless it is really humid) and in the small batch I end up using more than it calls for. I usually add my PS until I get the right consistancy b/c it can change day to day.
