I often hear people say that they add pudding to scratch cakes to make them more moist. How much pudding do you add? Do you replace any of the other ingredients with the pudding?

Usually pudding is added to cake mixes to help add moistness and to make a cake a little more dense. I'm not sure it works the same in scratch baking, but maybe someone that does it will be able to tell you for sure.

Instant pudding to bring moisture to scratch cakes as well. My MIL also told me that adding one or two tablespoons of mayonaise will add moisture to scratch cakes as well.

I say sour cream!!! I love to add sour cream to my cakes. Pudding makes the cake soooo dense. Sour cream has the fat content to keep it extra moist and light.
