I've heard a lot of people reccommend his gumpaste flowers book. I don't have a lot of experience with gumpaste, but learned a lot from the Wilton course. Would someone who has used the Wilton book and his book please share with me the differences or advantages of one over the other? What flowers does he teach how to make? Thanks everyone!
he's not in the UK. he's in New York City.
You can't even begin to compare his stuff to the Wilton book. He's incredibly talented, and he's a great teacher. One class with him will improve your skills immeasurably. He's not cheap, but for the level of instruction he offers I think he's worth it.
His DVDs are a very good investment - you watch him make the flower over and over and you can keep rewinding and work along with him as you learn the flowers.
Scott Clark Woolley is in New York City. Here's his website.

Hey guys - I have his book and he IS amazing! I ordered a gumpaste tool from him, and he personally answers his email, answers you right away, and he's so nice! I found his prices for his tools to be very reasonable. However, someone I know through Cake Central had a bad experience with him in person, so who knows. But I've talked to people who've taken classes with him who say he's amazing. I've taken a gumpaste flowers class with Nicholas Lodge, and the techniques seem a bit different. Until I've tried Scott Clark Wooley's, I can't really compare the two, but looking at his book - it almost seems like he uses a lot less steps but they still come out gorgeous. However, the book I have - Cakes By Design - I thought the directions were not very thorough for making gumpaste flowers, but maybe he has a different book specializing in them. Either way, the book is worth it - you'll "ooh" and "aah" through every page!
Fronk,
I've taken 4 classes from Scott and he is absolutely
super. He does have the patients for you in
class and his dvds are great. They are a good investment like jmt said. I use his gumpaste
recipe(I make it) and it is the best I've ever worked
with. He's a very spiritual man who has talent.
Pretty soon he won't be teaching as much like he
did the last few years. I'm booking a private
with him with another girl to cut the cost.
I just like listening to him. He's really smart! You can email him and he'll put you on his list for updates. His sugarpaste supplies are great!
PastryScoop.com is a great site about classes and
events. I'm actually taking Ron Ben Isreals class
on flowers at the french culinary in NY.
I saw him at a demo, and his flowers were very
pretty. Everyone has their own technique and I like
that. If anyone is planning a trip to ny, try booking a class with scott. If it's to much, email
me, and I'll take it with you.
