Help W Mini Wedding Cake

I had a request from my cousin asking me to do 1000 pcs of mini wedding cake for her wedding. icon_eek.gif

Ok... I was thinking of doing a 2 tier square stack wedding cake. The base measure 3 x 3 inch and the top measure 2 x 2 inch. Thought of doing poured fondant.

The question here is should I stack the cake then pour the fondant over or pour the fondant individually then stack them?

Secondly, if I use chocolate sponge cake, will the poured fondant absorb into the cake?

Third, The poured fondant will be tinted pinkish & ivory. Will the chocolate cake colour outshone the fondant?

I'm not sure, but i think the cake will show through the poring fondant if it's not thick enough. You may have to do more then one coat, and if the cakes are chilled before pouring the ganache i don't think it will absorb too much. The chilled cake will help the ganache set before it has a chance to soak in. I'm not sure but this is what i would do..hope it helps. Good luck.

Mid, I think the only way you are going to know for sure how this is going to turn out for you is to try a sample mini cake first. There are too many variables that could make differences in the effect you are trying to achieve such as what type of fondant, how thick you apply the first coat, etc. Give it a try and see how it works for you. I can't help with any ideas on the fondant, however I did want to mention WOW you go girls... 1000 mini cakes!! If I did that many I would have cake in every room of my house! Can't wait to see what you do! Also have been wondering the same thing So I will be watching this thread.
