Why Does My Mud Cake Collapse In The Centre?

When I bake my mud cakes they begin by rising really well then they collapse in the centre while still in the oven. What am I doing wrong? Has the temperature got anything to do with it? I bake at 160C fan forced.

I dont know the conversion to F but I bake mine at 325 f and it does well. Check for under baking too. Hopefully someone a little more aware of the temp conversion can help out too.
