Can anyone tell me why my spice cake made from Dede Wilson's Wedding CAke book cracked on top? I used wilton pans, magic-strips and followed everything down to a tee. I befuddled!! I've never had a "scratch" cake do this before.

Thanks, Rhondi! I love this site and spend way too much time surfing it - but I'm learning tons of stuff so I justify it as being educational time well spent!! No, if only I could convince mu husband!!

Check the temperature of your oven with a thermometer - excessive heat will cause the cake to crack on top.
