I'm just glad this cake was for my family. I love doing chocolate wraps but everything that could go wrong did go wrong. You can't see it in this pick but the chocolate had a tacky texture even though it was completely dry. The stripes aren't ever perfect with this technique but they were certainly a pain today! I'm not sure what went wrong but once again, I am just glad it wasn't for a customer!

Do you temper your chocolate? Maybe that might help. It looks like you have done this before. I don't know what happened. Good luck next time.

I just commented on this cake in your gallery photos and also PMed you Misty. There is an easier way to do this. Guess I will go ahead and post it here even though I sent it in the PM, it may help someone else who wants to try this sometime. There is a chocolate cigarette kit from Pastry Chef Central that makes great striped wraps. You spread your melted chocolate onto the Mylar with the handled scraper, use the toothed comb to scrape through the white chocolate to make lines. Have your colored melted chocolate in piping bags ready to go. Pipe the colored lines in the empty spaces, let set for a minute or two and then wrap the cake. The problem here is that your white chocolate was still too warm when it touched the colored chocolate and it caused it to melt and run out of shape. The nice thng about this handled scraper is that it works beautifully to smooth the icing on the sides of your cakes too, a bonus.

Hi Misty I admire your determination on the chocolate wraps you do. Because you push yourself to try new things you inspire others (like me) to do so too. I also appreciate the fact that it catches the attention of people like ShirleyW who can help to further master this technique. I really really want to try this, and it's mostly because I have been following you with yours. I haven't been brave enough yet, but I'm almost there! I know this cake didn't come out the way you wanted it too but I do really like the idea and look you were trying to achieve. thumbs_up.gif

Sunny77, That was so kind of you! I do love making the chocolate wraps! You should definitly try one. Doing it in just one color is pretty easy and turn out beautiful! I am going to get that tool Shirley mentioned, I know it will fix my problem! Shirley is an amazing teacher and an amazing lady. Maybe some day I will be able to help other people with techniques the way she does! Thanks again!

If you think this is your worst, I would fall over and faint at your best!

This chocolate wrap is B-E-A-U-T-I-F-U-L!!!!!!!!!! If I had seen that in the gallery, I would have popped it in my faves to do for 4th of July, in fact, that is just what I am going to do!!!

misterc, i'm so glad you posted this. I had the same problem a few months back trying to make stripes! never thought to add the color stripes afterward!
