Can You Re-Freeze A Cake?

Is it possible to do this? To take a cake that was frozen, then defrosted, and freeze it again? I defrosted too much cake..........

I always go by the rule that once something has been thawed it shouldn't be frozen again.

I'm assuming you are talking about an uniced cake. Cake and bread products can be thawed and refrozen safely. The freshness of the cake is affected each time you do this, though. I use cakes that have been refrozen and thawed more than once for scraps on sculpted cakes or for practice. They are safe to eat but may not be terribly fresh tasting.
