I am making my grandparents 50th anniversary cake. the whole freakin' family will be there, 400 people! It is a sit down service, waiters and everything, no buffet. I am making one giant dummy display and am going to have sheet cakes in the back, 9 FLAVORS! Oh yeah!!! (Hey, I'm the only one who ever went to culinary school, have to impress them, he he icon_lol.gif )
Only problem is HOW DO I SERVE? I am willing to get my butt in the kitchen and plate the slices myself if I have to, but I am trying to keep it as functional as possible. I need ideas ladies. Remember: sitdown service, absolutely no buffet. Thanks gals! thumbs_up.gificon_biggrin.gif

preslice the sheets (since no one will see anyhow)

and then the head waiter and an assistants can plate them quickly. -- they won't have to serve all at once anyway...got to clear dinner service

then burn a few calories on the dance floor (clear and serve cake time) -- DUCK DANCE!!!!!

Wow..that is some Family..Heck I don't think I even know 400 people let alone family!! HA!HA! I agree with Doug....pre slice and have the waiters/servers plate them and serve.

that's the job of the waiters...just like it is their job to find out what choice of entree.

they can do this as they come to clear the dinner service (as you all head to the dance floor -- hokey pokey!)

oh...and a nice touch could be to make little menu cards for each place setting. it would list the order of the entire dinner including any choices available, such as your cakes or entrees.

Is it possible to put slices on plates and have the waiters wheel the selections table to table and carts asking guests what they would prefer and pass it out that way?

I wonder if 9 flavors, while impressive, is just too much for this type of affair. Even if you went with 5 flavors, everyone would be extremely impresssed. Heck, you made cake for 400 people afterall, right???? icon_biggrin.gif

Make cards for each flavor, if the cake serves 8, make 8 cards. Each person can grab a card when they come in, and hand it to the waiter when dessert is served. That way, 102 people won't request the same cake that only serves 40.

i dont know if your family is rsvp-ing or anything like that. but, i'm guessing at a party with 400 people there will be place settings with name tags? if people are rsvp-ing you could have them say which flavor they want at that time. at my brother's wedding the name cards were color coded (appropriate colors, not neon or anything) cardstock, so it was reeeeally easy for the waiters.

make it even eaiser for waiters by combing Zama's and Lasidus1's ideas...

pick up color coded cards.
