Help With White Chocolate Buttercream

Would it be ok to use the white chocolate candy melts for this recipe If so about how many should I melt, It calls for 8oz? Also what is a hot water bath, how do I do it? And finally how much is 4oz of sugar when translated to measuring cup form? Sorry, I'm so bad at measurements but I would really like to try this recipe.

re melts: look at size bag you bought and work from there. If you bought a 1 lb. bag...then 1/2 of the bag. If a 12 oz bag then 2/3 (count them 2 for me, one back in the bag)

re: sugar --> 1/2 cup

water bath -- aka double boiler -- large pot w/ water (2 inch or so) at simmer. put even larger glass or metal bowl on top and put melts in there. turn off heat. stir continuously to melt the melts. don't let any water get in the melts or they will sieze -- turn rock hard in an instant.

8oz is approximately 1 cup, so 4oz would be 1/2 cup.

Candy melts don't fit perfectly into a measuring cup because of their disk shape, so your best bet is really to buy a scale and weigh them.

i HAVE A STUPOD QUESTION..
cAN YOU JUST ADD MELTED WHITE CHOCOLATE TO A REGULAR BUTTERCREAM RECIPE? OH, AND CAN i MEASURE SUGAR BY THE OUNCE IN A LABELED BABY BOTTLE? OR ARE THEY JSUT FOR MEASUREING LIQUID? sORRY TO HIJACK THIS POST, BUT i THAUGHT MY QUESTIONS MIGHT BENIFIT YOU AS WELL icon_biggrin.gif

Okay, I have a thought, and I could be wrong.......

8 oz. liquid is one cup, but dry measurement is different, is it not?

My thought is one pound is four cups, so 1/4 (4 oz. is 1/4 of 16 oz.) pound is 1 cup?

And hey, if somebody says I'm wrong, I'll believe you!
