Would it be ok to use the white chocolate candy melts for this recipe If so about how many should I melt, It calls for 8oz? Also what is a hot water bath, how do I do it? And finally how much is 4oz of sugar when translated to measuring cup form? Sorry, I'm so bad at measurements but I would really like to try this recipe.
re melts: look at size bag you bought and work from there. If you bought a 1 lb. bag...then 1/2 of the bag. If a 12 oz bag then 2/3 (count them 2 for me, one back in the bag)
re: sugar --> 1/2 cup
water bath -- aka double boiler -- large pot w/ water (2 inch or so) at simmer. put even larger glass or metal bowl on top and put melts in there. turn off heat. stir continuously to melt the melts. don't let any water get in the melts or they will sieze -- turn rock hard in an instant.

Okay, I have a thought, and I could be wrong.......
8 oz. liquid is one cup, but dry measurement is different, is it not?
My thought is one pound is four cups, so 1/4 (4 oz. is 1/4 of 16 oz.) pound is 1 cup?
