Just made up a batch of this for my DH and his friends who are currently on the 2nd day of a 3-day LAN party in our basement (they all bring over their computers and network them together and then play games against each other).
Anyway, they love it so much and it was so easy, I thought my fellow CC-er's might like the recipe since it would be great for a cookout and this is Memorial Day weekend and all!
10-layer Taco Dip
Ingredients:
1 can refried beans
1 small can of chopped jalepenos (for a HOT dish) or green chiles (for a mild dish)
1 pound ground beef
1 packet taco seasoning
1 bag shredded Mexican or cheddar cheese
1 cup finley chopped Vidalia or Spanish onion
1/2-1 cup your favorite salsa
1 small can sliced or chopped black olives
2 avacodos
1 tablespoon lemon or lime juice
1 teaspoon kosher salt
16 oz container sourcream
1 tablespoon chopped fresh cilantro
Directions:
Remove the pits from the avacodos, remove the flesh from the skins and then dice the flesh.
Mash the avacodo flesh with the salt and lemon/lime juice and then set the finished guacamole to the side.
In a casserole, layer 1 can of refried beans and top with canned jalapenos/chiles and then microwave on high for 3-4 minutes.
Meanwhile, in a skillet over med-high heat, brown 1 pound of ground beef mixed with 1 packet of taco seasoning.
Drain the meat and then add to the casserole dish.
Sprinkle 1/2 of a bag of shredded Mexican cheeses or cheddar cheese over the beef and microwave on high for 1 minute.
Meanwhile, in the same skillet, saute 1 cup of finely chopped Vidallia or Spanish onion until it just starts to brown.
Layer over the cheese in the casserole and then top with remaining cheese.
Microwave casserole on high for 1 more minute.
Spread 1/2-1 cup of salsa over the cheese (use 1/2 cup if it is thin salsa, 1 cup if it is chunky salsa).
Then top with a small can of sliced or chopped black olives, drained.
Spread the guacamole over the olives.
Top the whole thing with the sourcream.
Sprinkle chopped fresh cilantro over the sourcream
Serve with your favorite tortialla or corn chips.
I've made this a lot over the years (minus the meat) and everyone has always LOVED it - and I mean EVERYONE.
I have never ever ever had anyone not devour it, all tastes alike.
