I'm making a white MMF covered cake with red and blue MMF decorations for 4th of July.

I used a cream cheese buttercream filling. Do I need to refrigerate?

If I refrigerate MMF and it sweats when I take it out:

1) How long will it take to dry out again?
2) Will my red and blue MMF decorations run into the white if it sweats?

Suggestions?

When I put MMF covered cakes int he fridge I have found the best way is to set them in , and just loosely lay a piece of seran wrap over them (if there are a lot of foods with odors in there) I have found for me is to make sure the air is ciruculating around the cake. I have not had any problems with it sweating then. I just remove from fridge about an hour before serving and it works out great!.

As for the cream cheese buttercream, I would refridgerate only because I would rather be safe than sorry.
