I made some lemon curd on Saturday and I want to use it for a cake on Thursday. It's been in the fridge. Is that too long, should I make another batch? I don't have a problem w/ that - I just didn't want to throw out what I already had (I had some left over from a practice cake).

Alton Brown said it can last in the fridge up to a month -- and I take every word out of his mouth as food gospel. icon_smile.gif

I haven't had problems storing it for a couple of weeks. My recipe is supposed to be stored in the fridge, but it goes rock solid. ouch.gif It hasn't gone bad though! Just needs some elbow grease to get it out of the container.
