I have a huge wedding coming up, over 600 people 2 large wedding cakes and 200 petifours.

What would be the best and fastest way to do the petifours? they will be done with chocolate cake, must be covered in choc. with nuts and cake crumbs around the bottom, and a white choc. monagram on the top. I would like to cover them in a choc. shell (something that will harden) as they will each be boxed in an indv. 2x2 box.

dose anyone have any suggestions?

Have never tried it but maybe chocolate candy melts for the covering and white candy melts for the monogram. They would harden.

I thought I saw a recipe in one the the Wilton Class books for icing petifours. Royal icing w/cocoa and thinned??? Don't remember. Got access to a computer? For the monograms, could you type a bunch of "M"'s (example) in the style font you want (leaving spaces in between each), print the page, tape to a large cardboard, tape a piece of wax paper over that, then trace the letters using Color Flow Icing? Sorry if none of this helps.

that is such a good tip about making the monogram letters. Now I need a reason to try that icon_biggrin.gif

I didn't think about using the royal icing\\w cocoa, that's a great idea. I'll try it. Should I ice them first in buttercream or just pour the royal icing right over the cake?

When i do chocolate petit fours, i do the choc. cake mix. Then put choc. buttercream. Then put it in a box, and put trash bags around the box, stick in freezer. Wait at least an hour or so. Then i cut the squares and dip each one into poured fondant. You can make that choc., by adding a block of non-sweet bakers choc. to the recipe. The choc. poured fondant would probably taste better than just covering them with the decorator choc. PM me if u need a recipe. HTH
