I have to make about 5-6 displays for a trade show this september. Is there anything that you can add or do to fondant so that is doesn't fade after it's hardened?

That is a good question. I ran into that problem with my show cake. It's now all a very light blue. The sun light or flourescent light faded it. It might be the colors that you choose too that will determine how drastic the faded color will be. Mine was two months old by the time I made it to the show and I'd say I still have a good 80% of my original color. Just keep them covered and in a dark spot.

Anyone else with any tips that will help, I'd love to hear them! Great question!!!!!!

I'm thinking here. Those aren't for human consumption right? You might be able to use a matte spray varnish with a uv filter in it. Your cake won't be edible after that.
You might want to experiment on a dried scrap of fondant to see what happens if anything to the fondant itself.
You can find the matte spray varnish in the art supply section of the store. (hobby lobby or michaels. wallymart has it too in the crafts section).
