Cake W/milk, Can It Be Left Out?

i was just curious, i've been making my cakes w/milk instead of water. i've been putting them in the fridge before and after i decorate. i was just wondering if it would be okay to leave out on the countertop like for 1/2 to a full day.....if it has the milk. i was thinking since it has like a cup or so of milk if it would spoil being out in room temperture.

Are you talking about milk in the cake mix or frosting?
If it's in the mix and you've baked it, I don't think there would be any worries. If in the frosting you might not want to leave out for an extended period of time. icon_wink.gif

ya my cake, okay so it should be okay on just the countertop. but i actually put milk in my frosting, as well as butter, so i try to keep that refrigerated cause of the butter.

I make my bc with milk also. I keep my house pretty cool and my cake is fine for several days. Once I bought a caje at the bakery and asked that very question (before I started making my own). She said the cake would be fine for 7-8 days, but I'm guessing that's because of the preservatives.

even frosting made with milk and butter will be fine not refrigerated. particularly given most people use A/C

The sugars and fats act as a preservative. BC with a small amount of milk or cream is fine left out for a couple of days. I refrigerate the leftover icing for up to 2 weeks or so. Even ganache filling made with cream can be left out.
