Ok quick question...can I use Crusting Buttercream icing recipe and just add cocoa to make it "Chocolate". I need it to crust...but want chocolate.
And I can't find a recipe for crusting chocolate....?
If I can...how much cocoa would I add?
Thanks once again ....

I use Witon's chocolate buttercream and it does crust.

I always add either cocoa powder or melted chocolate to my basic buttercream recipe. You will need a little more liquid, but it will not change the crusting factor. Actually using cocoa powder does seem to make a bit of a dryer icing.

With the Wilton recipe (1 cup fat to 1lb sugar) you add 3/4ths cup cocoa powder or 3oz of melted chocolate. Of course you can add more of less depending on how much (or little) of chocolate flavor you want.
