Been Asked To Make A Cake For 200

I have only made stacked cake for 100 people. Transported it intact fine. This is a wedding cake. I only know the mom of bride, but have heard bride is picky. When I make the stacked cake, I always do either a 1234 cake from Down's cake flour or wilton's butter cake. Seen some people talk about cracked cake. This hasn't happened to me, but know Murphy's Law. The wedding is December 16. I am hesitant about cake. Can someone please tell me how many cakes to make? Should I take this on or not? Please let me know your thoughts.

With 200 servings you have lots of options for what size of cake and what sizes..... Are they looking for 2-3-4-5-6 tiers? Are they wanting them stacked or on plates/pillars? If they want a smaller tier cake can you make sheet cakes for more servings? Do you know what type of design they are looking at? Possibly doing one main cake with satalite cakes around it if they dont' want sheet cakes?

There are lots of options for you =)

forgot to touch on the subject of cracking/spliting. As long as you have a good support system you won't have any worries. But the support system will depend on the sizes and style of the cake.

you might want to talk to the bride first, since she is picky..You don't know yet what she wants. Did her mother tell you all the details
about the cake ? like style, flavor, color etc... ?

You can do this .. show us a photo when it's done..can't wait.. icon_smile.gif

I will let you know. I am hoping they do not procrastinate, and at least let me know somewhat their ideas. I am also hoping that the site of delivery is close by. I hate delivering cakes!!!

I would give them a deadline. Tell them you are interested in doing their cake for them but you need details by *insert date* in order to fulfill their order properly.

Make sure you give your self plenty of time so if they bring a design to you that you dont' feel comfortable with you will have time to work things out with them. Or if they want a cake that looks big (as in will feed 300-500 people) but they only want a cake for 200 people... a design can be decided on.

I would do the same thing with payment... deposit to hold the date by certain date, half of payment, and full payment due certain time before wedding date.

Just to make sure you are covered, and are not wasting your time. It also allows you to keep in contact with them to make sure you are doing what they want, and they haven't changed their minds on anything icon_smile.gif

You can definitely do this, just takes planning icon_smile.gif

I would definitely make sure you sit down with the bride also if you hear she is picky. You don't want a second hand story of what the bride wants, b/c things get lost in translation
