Pastry Pride- Did I Overwhip It?!

I'm in the process of icing a wedding cake with pastry pride and I cannot get it smooth!!! Every time I pull my spatula over the icing it just pulls little air bubbles out and I've got tiny little holes everywhere! How do I fix this? Should I just whip up another batch of Pastry Pride and cover the layer that's there already? Does it sound like I just overwhipped it?

It can be overwhipped, the same as whipping cream. You may want to start over and save the first batch to make a Bavarian filling.

I use it for most of my cakes. It sounds like you did over whip it. you might want to try a fine mist pray bottle and clean spatula and see how smooth you can get it. If it still has too many bubbles then i would try again and just mix it until it comes together and just starts looking smooth. I always use the spray bottle on my cakes-- but VERY little on theses.

How do you make it into Bavarian filling i would love to know shirley W.
