I was wondering what kind of butter everyone uses for the BC icing? Sometimes mine doesn't seem right, but it could be the humidity. Also, what kind of gels does everyone use? I use the Wilton but have not had good results with brown, black or burgandy. I was just wandering if I should try another brand, but honestly, I am in Tennesse and haven't seen any others. Thanks

I just use my store brand unsalted butter (salted sometimes if thats all I can get).
As far as the gel, I use Wilton as well.
I do notice that sometimes you have to add a lot to get a deep colour, but I think it would be the same for all gels.

Thank you very much, you are probably right about the gels, I just don't like that taste.......I guess here in TN, it is just the humidity

Do you have a local Kroger? Their store brand butter is great. It's all I use. I use the unsalted.

As far as coloring frosting, I use Americolor. You can purchase it online at the CC store for a better price than you could even get it in a local shop. It's much better than Wilton.

yes, we have a Kroger and I thought about using the Kroger brand butter but was afraid so now I guess I will try it.........
Americolor, hmmmm, never heard of it but I will try it

I couldn't begin to describe how much better they are than Wilton. You'll use a lot less, no aftertaste and the colors combine very well. They also come in squeeze bottles so no more toothpicks thumbs_up.gif You can order them here...

i use plain white shortening in my bc, and i'm in IN, and americolor rocks!!!! I made a flag cake tonight and no aftertaste, and it requires so much less than the wilton colors...I also did a dora cake for my baby girl's bday, and i managed black using americolor and it only tasted like buttercream not nasty color.

I'd recommend americolor and do frequently

I get my unsalted butter at costco. It is 1.43 /lb which is an amazing price. You do need to buy 4 lbs at a time which is not a problem for me.

I just bought some americolor colors. I thought they would be a little easier to control the amount than they actually are, but I am just coloring small bits of gumpaste, so it's probably a bit different than coloring a batch of icing. However, since the Americolor is not exactly living up to expectations, I have been buying more shades of powdered color. Its great for gumpaste. You can color the paste, and/or brush it on like petal dust. I got such a lovely color of pink for roses using "Cherry Pink"--mixed with a little americolor deep pink.

For a newbie like me just starting out, what colors would you all recommend? What are there basic colors you cannot live without? If you just wanted to buy at least 10 colors, which ones would they be?

I use the Great Value brand of butter.

As for colors I really like the Americolor, but also have wilton, and I ordered some powdered colors of CK brand to try out in Black and Red. The red seems to work really well so far, I really like it. The bakery I use to work in we used Bakery Craft Gels, I thought they were really good, but of course with red and black you still have to use a lot of coloring.

I use land-o-lakes and it has done well. I used to use whatever was chedap and wasent paying attention if it was real butter or not, but on here I realized that it makes a huge difference, and my iceing has been MUCH firmer since.
as far as colors go, I would look in a box of crayons, and get the main primairy colors, cause starting out you canb mix the colors and such. Maby that was a stupid suggestion but its what I did icon_smile.gif

I have tried dfiferent brands, but my standard is Land-o'lakes. I use salted butter (I can't keep both unsalted and salted in the house - and since I use salted for everything else, it just is easier).

Butter wise i use whatever is the cheapest, and iv never had any problems...as for the brand of color gel, since iv worked in bakerys the past few years , i'v been able to order color in bulk size, the brand i get is chefmaster, they come in 10.5 oz bottles and range between $3 to $6. I'm sure if you become friendly with a local bakery they'd order it for you

I use Land 'O Lakes and love the flavor...haven't made the jump to Americolors yet as I have been satisfied with the Wilton - even the red and the black with no aftertaste.
