Help With Ice Cream Cake!!!

For all of you that make these......how do you keep it not from melting. I barely got mine put together. It started to melt down the side and slide around. I had a mess! I cleaned it up the best I could and put it back in the freezer to firm up again, but I am afraid now to get it out and try to ice it. I plan to use Rich's betercreme for the first time. I really wanted to decorate it too but now I am thinking not! This is the first time I have attempted an ice cream cake and I really want it to turn out because I have customers requesting them. This is just a trial run (plan on taking it to a family picnic) but now I am just thinking about throwing the whole thing out!!! icon_cry.gificon_cry.gif How do you guys do it? How do you transport them without melting too! AARRGGHH!!!

Did you have everything frozen solid (including the cake) before putting it all together? I have done several ice cream cakes... in my pics, the sports ball cake, strawberry shortcake cake, castle cake, barbie cake and the dinosaur cake are all ice cream cakes. It just takes lots of time and patience...don't give up. It CAN be done. You just have to decorate a little bit and then run it to the freezer...and keep doing that til you're done. I've only made these for my family. I've never had to transport one before. I'd probably put it in a cooler with ice. As long as you don't have to take it too far it should be ok. Maybe even dry ice?? If you have to drive it a long way???
