Okay - I baked an entire cake mis in a 8x3 contour pan for about 50 minutes - the cake tester came out clean. I did use a flower nail. After I took it out of the pan and left it to cool, the middle sunk a bit (where the nail was). I am wondering what to expect in the am when I go to tort it. Is it cooked through. Any ideas?

My experience is that when a cake sinks in the middle, it will usually be a little underbaked in the same spot when torted. The underbaked part grosses some people out...to me, it's my favorite part!!!
