I really hope someone can help me, and I am sure there have already been post regarding this, but I do not have time to search for the answer. Last night I made a patch of stiff royal icing to make roses for my WC Level 3 final project. The icing just seems way too soft...I only put 5 tablespoons of water in it. Did the exact same recipe last week, and had no problems. Our weather around here has been screwy, and I am afraid the humidity is getting the better of my icing...can I add more merique powder? I really need some help here because I have to have all of my flower ready for class tomorrow night, and will be up half the night as is finishing them because of another committment earlier in the evening. The roses I made just kind of drooped (for lack of better way of saying)...the petals all laid on top of the others. I'm desperate! HELP! icon_sad.gif

I too agree that mostly you just need more Powder Sugar....

Add more sugar and beat it longer.

I don't know if this is too late to help -- but when I was in the Wilton classes and there was a royal icing problem, the instructor used cornstarch instead of more powdered sugar.

That was kind of why I was asking more merique powder...thinking that acts as the stiffner already...that maybe I should add more of it. Sure was frustrating last night...I was so proud of myself for remembering how to make the blasted roses, but then my icing wouldn't cooperate!
