Fresh Tomatoes...

Okay so my uncle and my parent's neighbor both have gardens and they have been nice enough to share their fresh picks with us. Unfortunetly we now have a ton of tomatoes. Now while we love them just sliced with a bit of diced onion on top or sprinkled with a bit of vingar, I just need something different to do with them. icon_smile.gif

Last year we ended up freezing a bunch of them, but I'd really like to be able to use them fresh if I can. So does any one have any great ideas for what to do with fresh tomatoes? Maybe a good spaghetti recipe that uses them? Heck, any kind of recipe that uses them might be nice at this point.

I really love the fresh veggies, but sometimes you get in a rut and do the same things over and over. I've had to get a bit creative with zuchinni and yellow squash, but I just can't think of too much for tomatoes, where you can still enjoy the fresh flavor.

You can chop them, drain, add fresh basil and garlic, and put the mixture on pizza dough (or pre-made pizza crust). Add a sprinkling of your favorite cheese, and bake to make the best pizza you've ever had!

I love to slice tomato and mushrooms, sprinkle with kosher salt(gives it a nice crunch),fresh ground pepper, fresh garlic and then pour a little italian dressing on it and let it set for a bit in the fridge.

I also slice the tomato and plate with fresh mozzarella cheese, sprinkle fresh chopped basil and garlic on top then drizzle some olive oil.

Chop them up with peppers and onions, cilantro, salt and you have fresh salsa...Nothing better than FRESH salsa!

We also slice them and sprinkle with a little sugar. Sounds wierd, but very good.

-Grilled cheddar cheese & fresh tomato sandwiches
-Tomato & cheese omlettes
-Tomato, mushroom and broccoli quiche
-Tomato, lettuce and avocado slices to turkey or ham wraps with garlic mayo
-Add fresh chopped tomatoes instead of canned to homemade chili
-Sliced tomatoes with a dash of salt as a side dish at dinner

As someone else mentioned, fresh tomatoes are a great replacement for sauce on pizza, or even as an additional topping.

I went to lunch with a friend of my last week and she ordered a specialty bagel topped pesto, tomato slices and swiss cheese which was then broiled.

My dh loves tomatoes sandwiches: 2 toasted bread slice, mayo, big slices of tomato, salt and pepper, and there you go!!!! tomato sandwich!!! you can add anything, cheese, lettuce, onions ....

Thank you everyone!! You have given me several things to do with them. I knew there was easy solutions, but sometime it is hard to think about them.

I am doing salsa tonight, though since I didn't think about it until after I went to the store I had to use a package mix we already had on hand as opposed to the fresh pepper had herbs.

I do have mozzarella and plan to make a basil vinagrete to go on them. We just haven't had anything this week that it would have gone with.

I think may be every meal next week will have tomatoes with it. HeHe!

BLT's are great with fresh tomatoes. How about gazpacho soup? With all the fresh vegetables in now that would be easy and cool!
