I want to get more fondant practice, but I'm in a chocolatey kind of mood ( icon_biggrin.gif ) I got an idea to make chocolate mmf, and i'm wondering if anyone has done it before? Would you melt the marshmallows then stir in the cocoa powder w/ the sugar? I think it would work, texture-wise. Just not sure about flavor...

Anyone?

That would probably work, you would probably need quite a bit of cocoa.
It would probably taste yummy. Let us know how it turns out.
Good Luck

I made it last night as an experiment...well actually I really needed ALOT of brown MMF for a cake and chocolate MMF souned better than MMF with a bunch of brown color.

IT TASTES LIKE A BIG TOOTSIE ROLL...my kids are playing with my leftovers as we speak, or maybe eating it, I don't know, obviously CC is more important than that sugar rush from H@%&L that is about to occur.

I added it to the powdered sugar, but make sure you don't put the full amount of sugar in , add slowly so it does not get too dry.

Cool, about how much cocoa did you end up using? Was it regular or the dutch process? Did you substitute sugar for however much cocoa to end up with the same dry amount?

Sorry so many questions

I put in about a 1/4 to 1/2 cup of regular hershey unsweetend cocoa, added some brown to the marshmallows to get a darker color, and put in about 1/2 the PS to start and slowly added a little at a time till it was the consistency I wanted.

I think 'chocolage ' is a very GOOD name.

Maybe you should create your own brand!

..another option is to add 1oz of melted chocolate per small batch of MMF!
