How do I mark off the lines, on a square cake to do quilting, how do i keep them straight and even?

The easiest way is to use an impression mat, but if you don't have one, I guess a ruler would be the best way. You can just do a search for "impression mat" and get a bunch of places that sell them.

I think it was Colette's wedding cake book that had instructions on using a triangle ruler or a triangle made of cardboard, being as tall as your cake and cut at the angle you want. The bottom of the triangle would sit on the plate or counter, and the slanted edge gives you a straight edge to quilt along up the side of the cake. Can't remember how she marked the intervals, but it was pretty simple (to read anyway)...
