How do I install fresh flowers between the tiers on a wedding cake, to cover the pillars. It is a popular style I have seen a lot, I was just wondering do I shove the stems into an oasis sponge, but how do I keep the cake from getting wet, I decorating with rolled fondant.[/b]

I have absolutely no experience with this but I was thinking of maybe a nice crystal or glass bowl to put the foam and the flowers in, then sit the bowl on the separator plate. Arrange the flowers so that you really can't see much of the bowl, or hide the foam from view in some other way.

Don't know if it would work or not, but that's my idea...hope it helps! icon_smile.gif

You need to make sure that the flowers do not come into contact with the cakes. I have no real experience with this, but I have read that the chemicals in the flowers can make people sick if they touch the cake.

I think that if you were to use the separator plate system, this wouldn't be an issue, as the flowers would be resting on the plastic plates.

Another alternative is the flower picks that you insert into the cake, and then put your flowers into.

I have seen people use this between layers. It is made to go around the fountain but you can add different height floral foams to fill in between the tiers and then fill with a little water to help keep them fresh. Only problem is there is only one size. But you could also get the different size clear plastic things the plant stores sell, just make sure that you have something between them and the cake (wax paper, parchment paper... etc...)

What about silk flowers? Can you use those on the cake without worrying about getting anyone sick? I want to make fondant roses but there just isn't time.

I think that silk flowers should be fine. I have used them without a problem.

You're in luck, I used to be a professional floral designer! What you need to get is made by Oasis. It is called an igloo or a dot, whichever size you want (between layers you probably want a dot which is smaller, the igloo is more for a larger cake topper. The dot is a pre-made small 1/2 sphere of fresh floral foam (make sure you get oasis, not sahara which is for silk flowers) that is permanently on a pice of plastic which will keep your cake from getting wet. Igloo is a larger version of this, with a plastic cage around the spherical part to help the flower stems from breaking apart the oasis since there would otherwise be nothing to support it. The thing to remember when using oaisis is to not push it under water, just let it sink naturally or you will end up with a dry area in the middle that your stems will hit and then they will dry up and wilt. First, what used to be called dots:
