hmmm, i just posted this topic and it didn't show up.. so forgive me if this is a double posting. i make all my cakes based on box mix but am looking to branch out and make "by scratch" cakes for my customers. i have searched the recipe files but they mostly seem to be how to doctor up a box mix (perhaps i'm not doing it right?)...anyway i would just love it if some of you would share a good recipe for a moist scratch made cake. the basic ones i need (but i would never limit it to!) are chocolate, yellow, white, lemon and spice. I have just done the same. I've been trying to get out of cake mixes for about a year now and have just posted some recipes on this site not too long ago that I've found to be somewhat fool proof and very yummy as well. I'll warn you, it does take some adjusting, but in the long run, it's a really rewarding change.=) If you look in the recipes posted here on the site, they are the Killer chocolate cake and Vanilla Bride's Cake.
Try The Cake Bible by Ruth Levy Beranbaum. She takes basic recipes and adds variations, making the ability to offer a wide selection very easy.
