ok, first let me say i searched the recipe thing and most recipes are how to add to box mixes. I make may cakes based on a box mix but i would like to branch out and do them by scratch for my customers. i need a good, basic, very moist recipe for AT LEAST chocolate, yellow, white and lemon cakes. anyone have any super recipes they are willing to share? icon_biggrin.gif thanks in advance!!!!!!!

The All Occasion Yellow Sowny cake and the Perfect American Chocolate cake from the CAke Bible are my favorites. It also has a recipe for white cake. Check it out! You cant' go wrong with this book.

I have a recipe that people always rave over. It's chocolate coffee cake.
Always very moist. Hope you like it. let me know if you try it.


2 cups flour
2 cups sugar
2 tsp baking powder
1 tsp baking soda
3/4 cup cocoa
1 cup buttermilk (I use 1/4 cup lemon juice w/ 3/4 cup milk)
1 cup oil
1/2 cup coffee (brewed)
1 tsp vanilla

Best Choc Cake is Toba Garrett's Choc Fudge Cake
Her Moist yellow cake is my fave yellow cake.

Most of my faves have buttermilk in them.

Whimsical Bakehouse Choc Chip Pound Cake is in the top 5 also for me.

I think the Perfectly Chocolate Cake from Hershey Cocoa powder is the best chocolate scratch cake. I've only made that one, ever. I'm too scared to try anything else.

I have tested many chocolate cake recipes before ulitmately making my own because I could never find one that maintained that fudge-like quality, but still have all the characteristics of a "cake."

I can give you my runner-ups. These were also favorites on eGullet, a culinary forum.

The runner up, the Double Chocolate Layer Cake on Epicurious;

Behind that, the Hershey Chocolate Cake someone mentioned above.

White and Yellow cakes fall into two categories, white, fluffy, airy like traditional bithday/wedding cakes or real "buttercakes" more dense and a bit lighter than a pound cake.

For the light variety, Cook's Illustrated are my favorites for both white and yellow.

ok the chocolate cake on this site called dark chocolate cake (90% sure that the name -its very simple and has teh words best cake ever in teh description). This seriously is the best chocolate cake. Every time i make it eveyrone has rave reviews, and the women around ehre (although very few) are chocolate addicts. The back of the cocoa container recipes i find to not be moist. this one tastes like box to me.

i am still trying to find a yellow that tates like duncan hines. Ill let you know if i ever do. I have come close but its just still not quite right. Yes i too wantt o replicate DH and not just take it and add to it. I LOVE the taste of DH.

I agree with leta...Toba Garrett's recipes are the best! If you don't want to shell out the cash for her books, her chocolate fudge and yellow cake recipes are at epicurious.com. I also love "The Cake Bible"'s white chocolate cake...to die for!

I make the Perfect Chocolate Cake that it is absolutely perfect. It is VERY chocolaty and moist.

I've made recipes from The Cake Bible as well by Rose Levy Beranbaum and I like her chocolate fudge cake recipe. It is really good as well.

I will be trying very soon her yellow cake recipe and will let you know.

Her book might be one of the ones you might want to add to your cake book library.

Got to agree with Rodneyck my favorite chocolate cake is the Double Chocolate Layer Cake from Epicurious. This cake is incredibly good.

I also really like the the Cook's Illustrated white cake. Lots of folks rave about the King Arthur's white cake, so I'm going to give it a try next time I make white cake.

Yeah, the Toba Garrett chocolate cake is the best I've ever made. I am new to decorating, but have been making cakes since I was old enough to do so. To me, this recipe is what a chocolate cake is supposed to taste like. It's very moist, thick, and rich.
