Chocolate Filled Chocolate Chip Cookies??

I make a cookies similar. Roll the cookie dough into a ball. With your thumb, create a well. Fill with (whatever filling ..... choc fudge, peanut butter mixture, etc). Then 'roll' the outer cookie dough to cover the filling. You now have a ball of cookie dough with a different flavored center.
Try that and see if it works for you!

With the peanut butter mixture you mentioned, would you add anything to the PB to make it more "stable" and not as creamy? Like graham crackers crumbs or something? I thinking of a PB filling more like a Reese's peanut butter cup....

Peanut Butter Filled Chocolate Cookies
(we call them "Reese Cup Cookies")
Beat together:
1/2 cup butter
1/2 cup granulated sugar
1/2 cup brown sugar
1/4 cup peanut butter (I leave this out because the PB is in the filling and I don't want the PB to overpower the choc/PB blended flavorings)
Add:
1 egg
1 Tbsp milk
1 tsp vanilla
Stir in:
1-1/2 cups all purpose flour
1/2 cup unsweetened cocoa powder
1/2 tsp baking soda
When well blended, shape into 32 balls.
Peanut Butter Filling:
3/4 cup sifted powdered sugar
1/2 cup peanut butter
Mix until smooth. Shape into 32 small balls.
To build the cookie:
Slightly flatten the choc dough ball and top with a PB ball. Shape the choc dough over the PB filling, completely covering the filling; roll into a ball shape. (I hold the choc dough in one hand and use my thumb to make a well .... put the PB ball in the well, then reshape the choc around the PB).
Place on ungreased cookie sheet (I use parchment paper). Lightly flatten with the bottom of a glass dipped in gran sugar. Bake at 350 degreen about 8 minutes or until just set and surface is slightly cracked.
This recipe came from the "Better Homes and Garden Biggest Book of Cookies" (475 recipes ..... my daughter got it for me for Christmas one year!)

I can't stop thinking about these cookies! I may have to settle for some chocolate-peanut butter ice cream...such a sacrifice...
I got this recipe years ago (i think from my Grandma, but dont quote me on that...lol) and these make for a fun twist on your chocolate chip cookie:
Chocolate Chip Thumbprint Cookies
Cookies
1/2 cup butter, room temperature
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 cup light brown sugar, firmly packed
1 1/2 cups all-purpose flour - sift or stir before measuring
2 tablespoons milk
1/4 cup chocolate chips, chopped
Filling:
3/4 cup chocolate chips
1 tablespoon shortening
2 tablespoons light corn syrup
1 tablespoon water
1 teaspoon vanilla
Cream butter until light; beat in salt and vanilla. Gradually add brown sugar, beating well. Blend in flour, milk, and chopped chocolate.
Shape dough into 1-inch balls; made a depression in center of each with thumb. Place cookies on ungreased cookie sheets and bake at 375° for 10 to 12 minutes. Roll warm cookies in confectioners' sugar. Cool cookies and fill with the chocolate filling. For filling: Melt 3/4 cup chocolate chips and shortening in a saucepan over hot water. Cool slightly then blend in remaining filling ingredients.
Makes about 3 dozen filled chocolate chip thumbprint cookies.
