Hi,
I want to make a carrot cake with cream cheese icing, covered in MMF. But I've read not to refrigerate MMF.
Any comments?

well there is some controversy whether or not cream cheese icing has to be refrigerated or not. I didnt get a good consensus either way, so I decided to refrigerate...So you could do a little research of your own on that. As far as the MMF goes, I am not sure.
I have refrigerated MMF twice. First time it was not very long in the refrigerator and I saw no changes to it. The other time I refrigerated it for several days and it got gooey (is that a word)? ![]()
I would definitely refrigerate cream cheese icing. Anything with that much dairy in it should be refrigerated IMO.
You can refrigerate MMF. I do it all the time. Just remember, when you take it out of the fridge, it will "sweat" and look glossy for a while. Don't touch it while it looks glossy, or you'll leave fingerprints like crazy.
After it has come to room temperature and been allowed to sit for a while, it will lose its gloss. Unless your weather includes 100% humidity levels like here in Houston ![]()

Would it be possible for you to ice the cake in the cream cheese frosting, refrigerate it, then make your decorations ahead of time, roll out your MMF, and then assemble it the day of? That way the frosting has been refrigerated, and the MMF is fresh? I don't know. HTH. Happy baking! ![]()

No I would need to refrigerate it for at least a day, I'll bake and decorate tomorrow and then on saturday my uncle is going to transport it 3 hours away for my mother's birthday.
So the cream cheese will already be unrefrigerated for 3 hours, which i'm not worried about ( I personally leave my cream cheese out all day, but do refrigerate at night, I don't like cold cake)
Just worried the MMF will look bad.
Guess it can't hurt to try for my mom.

i have a wedding cake due this weekend and the place its going to sit at will be in a hot room.. i want to pop the cakes in the frig or freezer until the last minute that i have to leave.. if i do that then take them on a 45 min journey would I be able to set them up okay?? the wedding is at 6pm and i am setting the cake up at 4 and putting on the finishing touches..
