Icing Dam

I've torted cakes before, with varying degrees of success. When I learned my teacher taught to make the icing dam using a plain coupler- to me that seemed like an awful lot of frosting and not enough filling on the small 8" round cakes I usually make. What size dam do you all make?

I use a 12 most of the time or just a disposable bag with the same size hole cut out of it....I worry about not making the dam big enough, so that's why I use a pretty hefty amount of frosting. HTH!

I use the coupler too. Although in class, we were told to use a #12 tip. I think you can still put a good bit of filling in.
