is there a special way to knead mmf? im constantly struggling with air bubbles in and under the fondant? any tips would be greatly appreciated icon_smile.gif

I've used a few different types of fondant, and always have air bubbles! I use a pin to prick the bubbles as soon as the fondant is on when it is still soft and pliable, then smooth the icing over again to get rid of the pin prick. Hope that helps!

I knead my fondant like dough. Folding it over itself than pressing down and away with the bottom of my palm. I can't stand those air bubbles I work so hard to get the icing as smooth as possible than end up with bubbles! Don't like the little pin pricks either! grrrr icon_mad.gif but I still like the look of fondant icon_biggrin.gif

Actually, you would want to wedge fondant like a potter wedges clay before putting it on a potters wheel. It is similar to kneading but it actually removes the air bubbles unlike kneading which adds air bubbles. Do a google search and look for directions or a video on wedging clay.

Is there any reason why you couldn't use the dough hook on the KA to do the kneading of the MMF? Haven't done the fondant yet but I am about ready to try it! icon_smile.gif

I used my dough hook but my machine still can't knead it quite all the way. It starts to strain it a little so I just do the last little bit by hand, don't want to blow up my mixer!

There are tons of horror story threads on here about people's KA burning up while making MMF....then again, some still use theirs.
If ya wanna take that chance icon_confused.gif

I have never tried using my bread machine, I wouldn't. Its so quick doing it by hand now...I can whip up a batch in just a few minutes.
I hate cleanup and with MMF EVERYTHING has to be greased...so the less I have to grease up, the less I gotta clean when I'm done thumbs_up.gif
