Anyone know how to prevent this? I smooth it and get it to look how I want it and a few hours later it has cracks running through it. GRRR! Is my icing too dry? Overbeaten?

Are you moving it around a lot after it has crusted?

yes I guess I do, I move it quite a bit when decorating and then for transport. Could my boards be too thin?

Yes, I think it might have to do with your boards. I've had the same thing happen to me... did the Viva thing and had a smooth cake, but when I picked it up, the frosting creased in the middle. I was so sad icon_sad.gif

most likely you need more support underyour cake. I would suggest at least stacking your cardboard two thick for your cakes. You can also have different sizes of masonite board or plywood cut and use those, just make sure you always get them back so you don't have to replace them!
