According to Wilton's chart, a 12" square serves 56 people. Then Earlene's chart from earlenescakes.com says a 12" square serves 40. Which one is more accurate?
Wilton's party size is for 2-layers torted into 4. I have heard that Earlene's sizes are a little more true than Wiltons and that most people have too little cake with Wiltons. But also keep in mind that Earlenes sizing are for weddings as well, not necessarily partys.

I go with 48 servings on a 2 layer, 12" square. I actually took out all my cake pans, marked them and measured what I thought was a fair size slice and that is what I came up with. I think Wilton's sizes are way too small but remember "party size" and "wedding size" are most always different. Me, I don't want a teeney weeney piece of cake. ![]()

I've never run out of cake using wilton's sizes, but if you want to look up one of Collette's books... her sizes are in between wilton and Earlene's.
For a 12in square cake, I quote my customers 50 servings for party and 70 for wedding servings. I think my pieces for both are a fair size.
Thanks all, I decided to go ahead and make the 12" square cake and I quoted Wilton's data. So first come first serve. I'm sure they will have enough b/c not everyone there will eat cake from what I've witnessed in the past.
