What about just using white buttercream? Or you could do the Cookies and Cream filling from WBH, but it is not going to be solid white....What flavor is the cake??

You could do just white buttercream although that thick of a layer may be too sweet. Depending on if its going to be outside/in warm or hot weather, you could do a stabilized whipped cream filling. Again, if it can be refridgerated and not sitting out, you could do a white chocolate mousse filling. Maybe cream cheese filling? or whipped white chocolate ganache?(which would be more stable then the cream cheese or whipped cream)

Could always do vanilla ice cream between the layers! icon_lol.gif

Here is a easy recipe for a white chocoalte bavarian cream filling.
1lrg pkg white chocoalte pudding mix
1 C milk
1 pint whipping cream
2 tsp almond extract

Whip until stiff. It is really easy and yummy and quite thick.

I'm doing the same concept, but instead of two layers, I'm baking three and putting a thinner layer of white buttercream since the white cake is going in the center. Since it's a basket cake, I need it to be taller anyway. I'll have to keep that filling in mind for future reference though.

This is a pampered chef recipe that will make a really fluffy white filling. It is very very good, I get raves on it. It probably wouldnt hold up to heavy stacking-also needs to be in fridge I assume.

1/2 powdered sugar
1/2 cup sour cream
1/2 tsp rum extract (you could probably do something different here to suit)
1 container 8-12 ounces of cool whip thawed
1 package cream cheese (8 ounces) softened

In large bowl whisk cream cheese and powdered sugar until smooth. Whisk in sour cream and rum extract. Fold in whipped topping into cream cheese mixture.

Last year, I made a 4th of July/Birthday Cake. For the filling I used white chocolate mousse topped with raspberry filling. It was a 1/2 sheet cake and was gone in minutes.
