I really want to supply the cake for my friends 40th birthday surprise.. however she lives 2 hours away! The cake is for the end of July which can be a rather humid time of the year... I primarily do all my cakes with all buttercream, versus fondant, etc.... Any suggestions on how to keep my cake cool for the road time. I would either do a full sheet or maybe a tiered cake if that would be easier! -Karen ![]()
It should travel fine, as long as the air conditioning is on at all times. Hopefully, it's only 2 hrs. But the problem occurs, if you have to stop for gas. When the car air is off, the cake will have a problem!
You could try using a bit more shortening in your b/c so that it holds up to the heat a bit more. I recently left a can of crisco in the car all day long in 90 degree weather on accident and when I opened the can I was sure it would all be liquid. But it was still solid- granted it was softer than usual, but that stuff can hold up pretty well in the heat- at least better than butter. Dependent on the type of car you have, I would fold the seats down, get the whole car nice and cooled off and be on my way!
It was 113 the day we did this. I chilled my cake overnight before the trip after it had been decorated. So we started off firm.
I put the cake in a box and set the box into a laundry basket that had been lined with a garbage bag on top of a folded towel. I put large ziploc bags filled with ice around the base of the box and on top of the box and sealed the garbage liner around the whole thing -- I placed the laundry basket in my precooled down car and we drove 3 hours with one stop for gas and a break.
The cake got there great - was still cool to the touch and the ice in the bags had melted about halfway.
Worked great!!!
