A really good friend of mine has a birthday coming up and I am wanting to do something more than the basic cake/frosting combo. She really likes mint coffee drinks from starbucks (not a coffee drinker so not sure about the terminology). I was thinking about doing a coffee flavored cake with a mint filling/frosting. I have looked up some of the recipes on cc but was wanting advice/tips from you all.
Oh and my other idea was doing something with amarreto b/c amarreto sours are a fav drink of hers. Plus I already have some amarreto flavoring.

Hmmmmm, I think the idea of coffee and mint is a little wierd. I tried one at Starbucks and did not like it, I think it is the kind of thing that may appeal to some, but not others. I think it might be hard to pull off in a cake form especially. I do like a lot of rich chocolate cakes that have coffee in them. Tyler Florence has a really good recipe on food network's website, called Chocolate Cloud Cake that has a cup of coffee in it. The coffee taste is subtle, and you could make the ganache that tops the cake with mint-flavored chocolate. There is also a great ice cream cake on the same website that has ameritti cookies and ameretto and it is to die for!

Chocolate/espresso cake with mint filling is DIVINE!!!!! Yum! I say go for it!
