Wow, a truly kosher cake needs to be made in a kosher kitchen, which means no non-kosher food ever prepared there and meat/dairy dishes kept separately. It sounds like you don't have a kosher kitchen. I recommend you contact your customer and find out exactly what she means by kosher. She may mean "kosher-style," but even that can vary. Almost any cake recipe could be used, but you'd need to use only ingredients *marked* kosher. I'll be happy to give you more info. if you'd like.

The Whimsical Bakehouse book has a recipe for a cake that does not have flour that I assume is considered "kosher" because they state that they sell many of them at Passover. It is the truffle cake on pg. 53. It is really good, also.

definitely go back to your customer for more direction. kosher isn't just ingredients, it has to do with prep and the environment as well.
