Luster Dust On Chocolate Seashells

Hello there, I made chocolate molds last night of seashells to put on a cake. I tried using the luster dust (dry) on the finished shells and it does not seem to be sticking........just rolls off. Any ideas???? ![]()
Hmm. I've not had a problem with the dust rolling off... are you using a clean brush to brush it on? You could try brushing it on w/ dust mixed w/ a little lemon extract, but I find that it kind of "melts" the chocolate.
I find that with chocolate, it's better to use a cotton ball, and dab the luster dust on. You could use everclear or alcohol and that should work fine as well. You'll get two different looks though. Make sure that your chocolates are completely dry and condensation free, and you should be fine.
You have to make sure they are completely dry before you try to brush it on. Let them come to room temp. They won't cover the shells completely, it's more of a pearlized dusting.
Thanks for the tips!!! Also how far ahead can I make these before I put them on the cake?? I have them in a airtight container with a paper towel in the bottom (in case there is some moisture). I am sure you can already tell, this is my first time trying this type of cake ![]()
I've made them 3 weeks in advance and they were fine!
I make & sell chocolate sea shells & they have a shelf life of up to one year!
